Chicken & Bacon Carbonara

Hard to beat a good pasta dish. This is a lighter take on a carbonara which can often be very high in calories and saturated fat. This version also includes some veggies ๐Ÿ‘Œ

Ingredients (Serves: 4):
350g whole wheat spaghetti
3 chicken fillets, diced
5 bacon medallions, diced
1 onion, diced
75g mushrooms, sliced
Fist of frozen peas
Fist of spinach
2 eggs
3 cloves of garlic
1 tbsp mixed herbs
2 tbsp light cream cheese
1 tbsp grated parmesan
~150ml low-fat milk

Method:
1. Boil your spaghetti until done al dente
2. While your pasta is cooking, fry your bacon, mushrooms, onion with 2 cloves of garlic minced and olive oil in a large pan
3. When they begin to cook, add your chicken
4. When the chicken is cooked, add the cooked pasta to the pan
5. Blend the eggs, milk, cream cheese, parmesan, mixed herbs, black pepper and 1 clove of garlic in a blender to make your sauce
6. Add your sauce to the pan, along with your spinach and boiled peas and toss until the spinach is wilted
7. Serve with cracked black pepper, some cheese on top or some garlic bread
