Chorizo Frittata

A high protein, low-carb meal suitable for any time of the day. Ready in about 15 mins. Very versatile, so you can add in or remove whatever you’d like ๐Ÿ‘Œ

Ingredients:
(Serves 2)
6 eggs
100ml milk
1/2 red onion, sliced
2 inches chorizo, diced
8-10 cherry tomatoes, halved
4-5 pieces sun-dried tomato, diced
Fist of spinach
50g cheese
2 tsp pesto

Method:
1. Preheat your grill to high heat
2. Add the onion and chorizo to a hot pan (you won’t need much oil because of chorizo)
3. When the onions start to soften, add the tomatoes and spinach
4. When the spinach is wilted, add the eggs and milk (whisked)
5. When the bottom and sides start to cook, add the cheese and pesto to the top and place under the grill
6. When it’s cooked through, cut into four quarters and serve with some salad
