Peanut Butter & Jelly Slice

Took a couple of attempts to get these right, but we definitely got there. While they’re very nutritious, it’s important to note they’re high energy too. So don’t dog it, because you will want to ๐Ÿถ
8 tbsp crunchy peanut butter
150g oats, blended
3 scoops of vanilla whey
3 tbsp maple syrup
2 tbsp honey
~200ml milk

300g fresh strawberries, chopped
2 tbsp honey
3 tbsp chia seeds

70g dark chocolate
1. Mix all your base ingredients in a large bowl. Using your hand is the easiest way. Add the milk slowly, adding enough so that it all binds together to form a dough
2. Press the mixture into a parchment lined 8×8 or so baking tin using the back of a spoon. Make sure it’s well pressed down and evenly distributed
3. Place the base in the freezer to set
4. Add your strawberries and honey to a pot and stir on a low heat until the strawberries start to break down and start bubbling. Break down any remaining lumps with a fork or masher until smooth
5. Add the chia seeds and continue stirring for a few minutes until the mixture gets thick like jam
6. Pour the mixture over the base and spread evenly
7. Melt your chocolate and pour over the top, tilting the tin until an even layer is formed
8. Place the dish back in the freezer for about 4-6 hours to fully set
9. Remove from the freezer and cut into your desired amount, at least 10
10. Store in the fridge in an air tight container
11. Put on the kettle
