Carne Asada Burrito

Very hard to beat a good burrito. This is as good as you’d get in any burrito bar, even Boojum! Lots of ingredients, but very easy and definitely worth it
(Serves: 4)

Ingredients:
Meat ๐Ÿฅฉ:
3 lean sirloin steaks, diced
2 tsp cumin
2 tsp paprika
1 tsp coriander
1 tsp dried oregano
1/2 tsp cayenne
1/2 tsp garlic powder
Salt & Pepper
Salsa ๐Ÿ’ƒ:
2 tomatoes, finely diced
1/4 large red onion, finely diced
1 small tin of sweetcorn
1/2 red chilli, finely chopped
Fist of coriander, finely chopped
1 clove of garlic, minced
Juice of 1 lime
Salt & pepper
Guacamole ๐Ÿฅ‘:
1 large avocado, peeled
1 tsp olive oil
Tsp coriander
1/4 of a red chilli
Juice of 1/2 a lime
To Serve ๐Ÿฝ:
4 large tortillas
400g tin of black/kidney beans
250g pouch Uncle Ben’s mexican rice
Cheddar cheese
Shredded lettuce
Sour cream
Chilli sauce

Method:
1. Trim any excess fat from your steaks and dice into small cubes. Add a tbsp of olive oil and your spices and mix well in a large bowl. Set aside to marinate
2. Mix all your salsa ingredients in a bowl
3. Mash all your guacamole ingredients in a seperate bowl until smooth
4. Fry your beef until cooked through
5. Heat your beans and rice
6. Assemble how you like and enjoy
