Chilli Beef Cheesy Baked Potato

A very easy dinner and great after a training session. The leftovers are perfect for tomorrow’s lunch with rice or in a wrap. Also very good with turkey mince or on a sweet potato ๐Ÿ‘Œ

Ingredients:
2 large potatoes
500g lean minced beef
1/2 a red chilli, diced (or 2 tsp paste)
1/2 a red pepper, diced
1/2 a green pepper, diced
1/2 a red onion, diced
2 cloves of garlic, minced
3 tsp cumin
1 tsp turmeric
3 tsp smoked paprika
2 tsp chilli powder
400g can chopped tomatoes
400g can of black/kidney beans
1 tbsp tomato paste

Method:
1. Preheat the oven to 200ยฐC
2. Rub the potatoes with a little oil and pierce some holes with a fork. Place in the oven on a baking tray for about 1 hour (depending on size) or until the skin is crisp and the flesh is tender
3. Add olive oil to a pan. Add your peppers, onion and garlic
4. Add your meat and spices and cook until brown
5. Add your chopped tomatoes, beans, tomato paste and chilli paste and let simmer while waiting for the potatoes
6. When the potatoes are ready, cut a cross in each one and load up with chilli and top with cheese
7. Put back into the oven for 5 mins to melt the cheese and serve with some sour cream on top
