Chicken Satay Skewers

You’ll want to give these a go. They are high-protein, low-carb and have some healthy fats too. You can serve them hot with some rice and veg or have them cold as a grab-and-go snack

Ingredients:
6 chicken fillets, diced
4 cloves of garlic, minced
6 tbsp soy sauce
2 tbsp fish sauce
5cm ginger, grated (2 tsp paste)
1 tbsp medium curry powder
1 1/2 red chilli, chopped (4 tsp paste)
4 tbsp peanut butter
4 spring onions

Method:
1. Preheat grill to max
2. Add 2 tsp minced garlic, diced chicken and soy sauce to a bowl and mix to marinate
3. Thread the chicken onto the skewers (not too tight)
4. Place the skewers on a greased grill pan and cook for ~10mins, or until the chicken is cooked
5. Place the remaining garlic, soy sauce, fish sauce, ginger, lemongrass, chilli, peanut butter, spring onion and a splash of water to a blender and blend until smooth. Add water if too thick
6. Coat the skewers in the sauce and top with some sesame seeds and spring onion
