Banana & Blueberry Oat Muffins
Ingredients:
2 cups extra course wholemeal flour
1 cup oats
1/2 cup coconut oil, melted
1/4 cup of honey
2 eggs
3 bananas, ripe
1/2 cup Greek yoghurt
1 tsp vanilla essence
1 tsp baking powder
1 tsp baking soda
200g blueberries
Pinch of salt

Method:
1. Add coconut oil (melted), honey, eggs, bananas, Greek yoghurt, and vanilla essence to a blender or nutribullet. If you don’t have one, mash well in a large bowl until it forms a smooth liquid
2. Add the flour, oats, baking powder, baking soda and salt to a large bowl and mix around
3. Pour in the wet mixture and mix until combined
4. Fold in the blueberries
5. Line a 12-cup muffin tray with liners and fill each cup evenly with the mixture
6. Bake at 185ยฐC for 25-30 minutes, or until the tops are golden brown
7. Place on a wire rack to cool
8. Put on the kettle
