Shakshuka
Perfect weekend breakfast or brunch. Bacon, chorizo, beans, peppers or feta are some other optional ingredients

Ingredients:
3 eggs
1/2 red onion, diced
3 mushrooms, sliced
Large clove of garlic, minced
Can of chopped tomoatoes
Tbsp tomato paste
Tsp red chilli paste
Tbsp smoked paprika
Tsp cumin
1 fist of spinach

Method:
1. Preheat the oven to 220ยฐC
2. Fry your onions, mushrooms and garlic in extra virgin olive oil
3. Add your pastes, spices, chopped tomatoes and spinach. Stir until the spinach is wilted
4. Make small wells in your sauce and crack in your eggs
5. When they start to turn white, top with salt, pepper and cheese (optional) and place in the oven until the cheese is melted and the eggs are cooked through but still soft
6. Serve with toast
