Greek Yoghurt Shards

A very handy low carb, high protein grab-and-go snack
๐ŸŽฏ
Ingredients:
500g Greek yoghurt
Toppings of choice ๐ŸŽฏ


Method:
1. Pour the yoghurt into a shallow lined dish and spread evenly
2. Top with fruit/berries/nuts of choice
3. Place in the freezer for 2-3 hours until set
4. Store in the freezer and break off a piece as you want

Banana & Oat Crumble Muffins ๐ŸŽฏ A nice little crunch on these and another great way to use ripe bananas ๐ŸŽฏ Ingredients: 3 ripe bananas 2 eggs 1/4 cup honey Tsp vanilla essence 1 cup low-fat Greek yoghurt 2 cups wholemeal flour 1/2 cup oats 2 tsp baking powder 2 tbsp chia seeds 1/2 cup low-sugar granola ๐ŸŽฏ Methods: 1. Preheat the oven to 180ยฐC 2. Blend the bananas, eggs, yoghurt, honey and vanilla essence in a blender, or mash well until smooth 3. Tranfer to a large bowl with the dry ingredients and mix 4. Spoon mixture into a lined muffin tray 5. Sprinkle the granola on top of the muffins 6. Into the oven for 25-30 minutes and leave on a wire rack to cool 7. 2. Turn the chicken breast-side down, and cut out the backbone with a kitchen scissors
3. Turn it back around and press down hard to flatten
