Greek Yoghurt Shards

A very handy low carb, high protein grab-and-go snack
๐ŸŽฏ
Ingredients:
500g Greek yoghurt
Toppings of choice ๐ŸŽฏ


Method:
1. Pour the yoghurt into a shallow lined dish and spread evenly
2. Top with fruit/berries/nuts of choice
3. Place in the freezer for 2-3 hours until set
4. Store in the freezer and break off a piece as you want

Banana & Oat Crumble Muffins ๐ŸŽฏ A nice little crunch on these and another great way to use ripe bananas ๐ŸŽฏ Ingredients: 3 ripe bananas 2 eggs 1/4 cup honey Tsp vanilla essence 1 cup low-fat Greek yoghurt 2 cups wholemeal flour 1/2 cup oats 2 tsp baking powder 2 tbsp chia seeds 1/2 cup low-sugar granola ๐ŸŽฏ Methods: 1. Preheat the oven to 180ยฐC 2. Blend the bananas, eggs, yoghurt, honey and vanilla essence in a blender, or mash well until smooth 3. Tranfer to a large bowl with the dry ingredients and mix 4. Spoon mixture into a lined muffin tray 5. Sprinkle the granola on top of the muffins 6. Into the oven for 25-30 minutes and leave on a wire rack to cool 7. โ€ข 2 chicken fillets, butterflied
โ€ข 2 tbsp fajita seasoning
โ€ข 2 slice low-fat cheese
โ€ข 200g mixed peppers, sliced
โ€ข 1/2 small onion, sliced
โ€ข 2 tbsp salsa
โ€ข 1/2 avocado
โ€ข 1/2 lime
โ€ข 1 tsp easy garlic
โ€ข 1 tsp dried coriander
โ€ข 1 tsp chilli flakes (optional)
โ€ข Jalepeรฑos (optiona)
โ€ข 2 burger buns

๐— ๐—ฒ๐˜๐—ต๐—ผ๐—ฑ:
1. Heat pan on medium heat and add olive oil
2. Butterfly your chicken fillets, season with fajita mix and rub in well. Add to the pan
3. As chicken is cooking, making your guacamole combining the avocado, garlic, coriander, chilli flakes and lime juice
4. When the chicken is nearly cooked, add the peppers and onion to the pan and place the cheese on the chicken
5. Lightly toast your bun and add salsa
6. When the cheese is melted and and veggies have softened, assemble your burger

โ€ข 4 chicken fillets, diced
โ€ข 1 tbsp olive oil
โ€ข 1 tsp easy garlic, or 2 cloves
โ€ข 1 tbsp mixed herbs
โ€ข 1 tbsp dried basil
โ€ข 1 onion, finely diced
โ€ข 50g chorizo
โ€ข 2 500g bags of gnocchi
โ€ข 680g passata
โ€ข 125g mozzarella ball

๐— ๐—ฒ๐˜๐—ต๐—ผ๐—ฑ:
1. Heat olive oil in a pan and add the onion and garlic
2. When the onions soften, add the chorizo
3. When some oil is released from the chorizo, add the chicken
4. Add the mixed herbs to the chicken
5. When the chicken is cooked, add the passata, basil and gnocchi to the pan and stir well
6. Add all of the contents of the pan to an oven dish, spread out evenly and add the mozzarella on top
7. Place in a preheated over at 180ยฐC for 15 mins

โ€ข 1 chicken breast
โ€ข 1 smoked bacon medallion
โ€ข 1/2 tbsp smoky seasoning
โ€ข 1 tbsp barbeque sauce
โ€ข 25g low-fat cheese

1. Season the chicken breast with the smoky seasoning and rub in well 
2. Wrap the medallion around it
3. Place in the air fryer for about 10 mins
4. Spread the barbeque sauce on top and add the cheese
5. Cook for a further 5-7 mins until the chicken is cooked and the cheese in melted
