Chocolate Banana Cupcakes

Ingredients:
1 cup coarse wholewheat flour
3 ripe bananas, mashed
1/4 cup honey
1 tsp vanilla extract
1 large egg
2 tbsp coconut oil, melted
1/2 cup low-fat Greek yoghurt
1/2 cup unsweetened cocoa powder
1 tsp baking soda
Pinch of salt

Method:
1. Preheat the oven to 180ยฐC
2. Mix the bananas, honey, vanilla extract, egg, coconut oil and yoghurt until well combined
3. Add all remaining dry ingredients to the wet mixture in a large bowl and mix to form a smooth batter
4. Pour batter into a your lined cups and place a walnut on top (optional)
5. Bake for about 25 mins and leave on a wire rack to cool
6. Throw on the kettle
