Homemade Vegetable Soup
Very easy way to increase your vegetable intake. One of those things that seems harder than it is for some reason?
Perfect to have with a salad or sandwich for lunch

Ingredients:
4 sticks of celery, chopped
1 large onion, diced
5 corrots, peeled and chopped
1 red pepper, diced
7 baby potatoes, chopped
3 cloves of garlic, chopped
3 vegetable stock pots
2 tsp mixed herbs
2 tbsp reduced fat creme fraiche
2 tbsp olive oil

Method:
1. Chop all your veg fairly small (roughly 1/2 and inch)
2. Heat a large pot with olive oil
3. Add the celery, onion, carrots and red pepper to the pot and sweat for 5-10 mins
4. When they start to soften, add the spuds, garlic and mixed herbs
5. Mix the 3 stockpots with 3 cups of hot water and add to the pot
6. Allow to simmer for about 20 mins until the spuds are soft and you can easily pierce with a fork
7. Blend using a hand blender if you have one, or in batches if not
8. Stir through the creme fraiche. If it’s too thick add milk or water
