Marinated Baked Salmon

Equally nice hot or cold and a very tasty source of protein and healthy fats. This was done in the oven but it’s a perfect recipe for BBQ season
(Serves 6)
6 salmon darnes
200ml soy sauce
4 tbsp rice vinegar
1 tsp tomato puree
Dash of tobasco
Juice of 1 lemon
1 tbsp sesame oil
1 chilli, chopped
1 inch ginger, chopped
1 tbsp chopped coriander
1. Preheat the oven to 180ยฐC
2. Cut salmon into the amount of pieces you want
3. Mix all the ingredients and pour over the salmon in an oven dish. If you have time, allow it to marinate for a while
4. Place in the oven for about 20 minutes or until the salmon is firm to touch
5. Serve hot with rice/noodles and veg, or cold with salad
