Tortilla Quiche
This one is a keeper! Ticks all the boxes and is perfect for breakfast, lunch or dinner. Just heat a slice in the oven, add some sides and away you go. The fillings are up to yourself, but this is what I went for:

Ingredients:
3 wholemeal tortilla wraps
8 eggs, whisked
200ml milk
5 bacon medallions, diced
10 mushrooms, sliced
1/2 a red onion, diced
2 fists of spinach
10 cherry tomatoes, halved
Some spring onion, diced
1/2 cup of cheese, grated

Methods:
1. Preheat the oven to 180ยฐC
2. Grease a 25cm-wide oven dish with 1 tsp olive oil
3. Brush the tortillas with olive oil and cut 2 of them in half
4. Lay a whole tortilla in the base of the tin, then overlap the halves around the edge up to the rim. (If you like a thick base, add a fourth tortilla on top)
5. Lightly fry the bacon, mushrooms, onions and spinach until just before they start to brown and transfer to the dish
6. Whisk the eggs and milk in a bowl, (season to taste) and pour over your fillings
7. Scatter the cheese, tomatoes and spring onion over the top
8. Bake for ~30-35 mins until cooked through and golden
9. Leave to cool in the dish for 10 mins and cut into 6 even slices
